By popular demand… actually by demand of the lovely http://viictoriasecret.tumblr.com/, here is my zucchini bread recipe. It says that the walnuts are optional, but seriously, without them it just isn’t as amazing. ENJOY!! Let me know how yours turns out :)
1½ cups all-purpose flour
1 teaspoon ground cinnamon
½ teaspoon baking soda
½ teaspoon salt
¼ teaspoon baking powder
¼ teaspoon ground nutmeg
1 beaten egg
1 cup sugar
1 cup finely shredded, unpeeled zucchini
¼ cup Canola oil
½ cup chopped walnuts or pecans (toasted, optional)
1. Grease the bottom and sides of a loaf pan; set aside. In a medium bowl combine the flour, cinnamon, baking soda, salt, baking powder, and nutmeg. Make a well in center of flour mixture; set aside.
2. In another medium bowl combine egg, sugar, zucchini, and oil. Add zucchini mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in nuts. Spoon batter into prepared loaf pan.
3. Bake in a 350 degree oven for 50 to 55 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan for 10 minutes and then remove. Cool completely on a wire rack.
*** This can also be made as apple bread by replacing the zucchini with 1½ cups finely shredded, peeled apple.
Hello ya’ll. I am writing a little postie here to give an update for no reason other than to amuse myself. I am not only still healing this gash in my arm, but I have a throat infection of some kind that I can’t go to the doctor about because Joe and I’s insurance does not kick in until September 1st. SO- as a result I am making the most of it by watching “UP” and baking blueberry meringue cookies. I have never made meringues, but here’s to hoping they turn out and distract me from my throbbing esophagus.
I really shouldn’t complain; its gorgeous out, its Friday, I have an amazing husband taking care of me, and the people around me are all pretty awesome. Still grateful, just a little bit woozy from the meds.
So I hope my day ends better than it started. I tried to lift my fat puppy onto our bed this morning and ended up falling on her iron crate and ripping my arm open. Yay for bloody messes in the morning! Good thing I have a fast acting husband! My arm is patched up and my puppy will be staying on the floor. Also, this all happened right before my in-laws left, so they got to see me cry, which is awesome. I didn’t get the job that I interviewed for yesterday (it would have been SO amazing to have), but there is something better out there God has in mind.
